Colorado Farm to Table
Colorado Farm to Table is a nonprofit organization founded in Salida, Colorado, dedicated to sustainably growing and donating fresh, nutritious vegetables to food-insecure families across the state. Established in 1996, the initiative started with a small garden plot and has since grown to operate a 15-acre farm that annually harvests roughly 100,000 pounds of produce such as corn, squash, cabbage, and broccoli. The mission centers on fighting food insecurity by distributing all crops free of charge to local food banks, soup kitchens, and pantries, ensuring equitable access to healthy food for those in need. Colorado Farm to Table employs a volunteer-driven model, inviting people of all ages to participate in farming experiences, which not only lowers operational costs but also fosters community engagement and agricultural education. The organization is committed to sustainable and regenerative farming practices and collaborates extensively with other nonprofits, businesses, and food distribution partners to maximize its impact on hunger relief throughout Colorado.
